Dean even tried to use throwing stars in the series finale, but unfortunately, Sam stopped him.

They wouldn’t have been able to save as many lives as they did without the arsenal Dean kept in his trunk. Unfortunately, there was some collateral damage when they were saving the world. There was one weapon they used that proved enormously helpful, but not in the way they intended it to be.
It was a game changer in l season 3 when Ruby was introduced with the demon-killing blade. This made it much easier to kill demons. They didn’t have to trap the demon. They could kill it. Unfortunately, killing the demon also killed the humans.
